raw caramel slice
If you love caramel slices, you’ll LOVE this raw, vegan version. My friend Carly from Holistic Life has created this deliciously amazing recipe for you all !!
RAW CARAMEL SLICE
Base:
1/2 cup almonds 
3/4 cup almond meal
1/4 cup shredded coconut
4 medjool dates
3 tablespoons coconut oil 

Blend the almonds, almond meal and shredded coconut in a food processor for a few seconds to grind the almonds up. Then add dates, coconut oil and blend for a few minutes so it starts to bind together.
Then lay flat on baking paper and place in the freezer while you prepare the caramel layer. 
 
Caramel centre:
1 cup cashews 
4 medjool dates
1 tsp lucuma powder
4 tablespoons coconut oil 

Add all ingredients to a food processor and blend till it forms a paste. Then spread out on the base layer and place back in the freezer. 
 
Top Layer:
5 tablespoons cacao powder 
1/4 cup cacao butter
5 tablespoons rice syrup

Add all ingredients to a mixing bowl and mix well, then spread the chocolate over the caramel layer and place back in the freezer for at least 2 hrs to let it all set.
